A single ear of golden wheat, it sounds so simple and insignificant yet this has been a staple of the human diet for over 10,000 years.  The beauty and the structure of this important grass is very rarely considered.  Long ear spikes striking out like a lion’s mane and tightly packed seeds wheat contains high amounts of protein and carbohydrate so perhaps we should take a closer look and appreciate it.
